Denver Biscuit Co. Boasts Southern Grit(s)

It is no secret that Denver is home to some of the nation’s best restaurants, and the Denver Biscuit Company is definitely no stranger to being ranked among “the best.”
This place is where the southern hipster foodie is at home. With a rustic and industrial design, the restaurant is the ideal setting to get a taste of the south with a twist: for example, a moist and flaky buttermilk biscuit either in sandwich form or topped with your favorite sweet or savory treats is a delicious surprise. Denver Biscuit Co. is also the perfect place to catch a picturesque Instagram post of a hand-crafted meal to make everyone jealous. That is, if visitors can stand the long wait for one of their delicious menu items.
The Denver Biscuit Company, best known for its biscuits and biscuit sandwiches, is set in the back of Atomic Cowboy. The Atomic Cowboy is a bar and also the home of pizza restaurant Fat Sully’s, and, obviously, the Denver Biscuit Company. The location is more often than not packed with hungry and anxious customers.
Owner Drew Shader originated the idea of the Denver Biscuit Company from his food truck, The Biscuit Bus. Following the success of the food truck, which opened in 2009, Shader partnered with his friend, Jonathan Larsen, and the pair decided to open up the Denver Biscuit Company in the back of Shader’s bar, the Atomic Cowboy, which has been in business since 2004. Shader and Larsen wanted to bring a taste of the south with a “Mile High Twist” to the Denver community.
The restaurant received national attention when popular TV chef Guy Fieri featured the Atomic Cowboy on his Food Network show Diners, Drive Ins, and Dives, calling the restaurant the perfect “triple threat.” The Denver Biscuit Company was also featured on CNN in 2012 and on The Cooking Channel in 2011.
The menu features a total of 17 biscuit combinations: 10 different biscuit sandwiches, and seven different biscuit platters. One of the best offerings is the DBC Club–a biscuit sandwich with buttermilk fried chicken, bacon, cheddar cheese, iceberg lettuce, tomato, and chipotle ranch ($9.75). A sweet and savory option is the Jack Lee, which has tender belly bacon and strawberry jam ($7.95). One of the best biscuit platters is the Strawberry Shortcake Biscuit Platter, which includes a buttermilk biscuit topped with strawberries and whipped cream. From savory sandwiches to sweet treats, the Denver Biscuit Company has something for everyone and is sure to keep customers returning for a long time.
The Biscuit Bus is still running and can be booked for private parties and events. More information on the Bus can be found on denbisco.com.
